Pseudo-Kosher

Whenever I have cow milk and goat milk in the fridge at the same time, one of them goes bad way before it should.

I'm pretty sure it's not a rule of Kosher not to mix cow and goat milk (they seem like they'd be equally-hoofed?) but doesn't it sound like one?

To my knowledge, there is no prohibition against mixing different kinds of dairy. Dairy is not to be mixed with meat. And all the dairy is supposed to be certified kosher, but cow dairy and goat dairy could be eaten at the same dairy meal.

I never actually realized that dairy means "milk". I always thought it meant "cow-related", because in most areas of my life those two are synonymous

Ah ha. Yes, dairy means anything made of milk. Meat (in kosher terms) means cow, lamb, chicken or other non-pig animal flesh killed and stored by kosher methods.
